An introduction to our friendly & helpful staff

Matthew Tailford

Matthew has been at Tailford Meats since leaving school over 30 years ago. When he isn’t in the shop providing our customers with the best quality Scottish meat available, Matthew has a keen interest in ice hockey and can be found supporting the Edinburgh Capitals at their next match, where he is also general manager. He also likes photography, walking his dogs and regular trips to the cinema. Matthew’s favourite cut of meat from the shop is our Bistro burgers, which we make for a number of cafes and bars in Edinburgh and West Lothian.

Lee Tailford

Lee Tailford has been with Tailford Meats since leaving school 26 years ago. When he’s not in the shop, you’ll find him spending time with his son Tylor. A keen fisherman, Lee owns his own fishing boat, regularly taking it out for fishing trips, and also enjoys playing tennis. His favourite cut of meat from out shop is the gammon joint. An incredibly versatile piece of meat, gammon is great for roasting, slow cooking and makes for the most amazing crackling. It’s also ideal for salads, sandwiches or on a charcuterie board when left to go cold.

Bill Spiers

Bill has over 55 years of experience in the meat industry, and has been with Tailford Meats for over 40 years. A keen family man, Bill has a daughter and a young grandson. When he’s not in the shop, BIll has a keen interest in horses, classic minis and speedway, supporting the Edinburgh Monarchs racing team. His favourite cut of meat from the shop is our pork sausages. They go with everything, and are particularly great with family meals, such as when the grandchildren come around or family barbecues in the summer.

Mark Crane

Mark has been with Tailford Meats for 7 years and has been in the meat industry for over 32 years. A family man, Mark is married and has 7 sons and 2 grandchildren. When he’s not in the shop, Mark likes to keep fit and practices MMA. He can also be found regularly walking his two old English bulldogs. Mark’s favourite cut of meat from the shop is our pork loin roast, which he likes to cook low & slow and make pulled pork with.

Simon Crane

Simon has over 30 years of experience in the meat industry, and has been with Tailford Meats for 7 years. A family man, Simon is married and has a daughter. He is also a keen vlogger on his Youtube channel, where he talks about his interest in horology and fine watches. His favourite cut of meat from our shop is the steak mince. Incredibly versatile and easy to use, Simon likes to use it to make the perfect lasagne.

Paul Furneaux

Paul has worked at Tailford Meats for over 16 years since leaving school. He is married with a daughter, and when he isn’t in the shop, he can regularly be found hitting the gym where he is a competitive powerlifter. Paul also likes healthy eating, and his favourite cut of meat from the shop is our lean chicken breast which is the perfect source of lean protein.

Chris Gordon

Chris has worked for Tailford Meats since he left school 16 years ago. A keen family man, Chris is married with four children – three sons and and a daughter. Chris is also interested in photography, football, MMA and enjoys regular trips to the cinema.

Richard Hartmann

Richard has been at Tailford Meats for 5 years. A family man, he is married with two children, and when he isn’t spending time with them he has a keen interest in ice hockey. He played professionally at the highest level, and still coaches in the Elite Ice Hockey League, which is the top league in the UK. His favourite cut of meat from the shop is our turkey breast, which has been a major part of his diet as a professional athlete for years.

George Ferdinando

George has been with Tailford Meats for 6 months, and has over 12 years of experience in sales. A fan of ice hockey, he is also part of the ownership team of Edinburgh Capitals along with Matthew, and enjoys playing as well. He can also be found out and about socialising, and enjoys regular trips to the cinema. His favourite product from the shop is our steak pies, which are packed with flavour and are quick and easy to prepare. Simply add chips, potatoes or steamed veg for the perfect meal!

Evelyn Mitchell

Evelyn Mitchell has been with Tailford Meats for 10 years. She has two grown up children, and when she isn’t in the shop, she is interested in stock car racing, watching ice hockey and cooking. Her favourite cut of meat from the shop is our ribeye steak, which is so easy and quick to cook with just the right amount of marbling for the perfect juicy, tender steak.
